A few days ago I stumbled upon a neat blog that listed some popular foods from many different countries.  It is one of the most interesting things I have come across in a while and I wholly intend to make a good portion of the foods on this list.

Khachapuri Sliced
I started with one from Georgia, Khachapuri.  IT'S CHEESE AND BREAD!  How could it get any better?  I test made it once and wow, it's one of those greater than the sum of its parts things.  However, I wanted to make more of a meal out of it this time and I knew my wife would hit me if I served her just cheese and bread twice.  So, I added some steamed potatoes to the bottom and I used puff pastry dough.   I have yet to find a decent store bought pizza dough, so it was down to a can of bread dough to Puff Pastry dough.  Sorry foodies, I was lazy that day.

So start by defrosing one sheet of dough.
Dice the potatoes into 3/4 to 1 inch pieces.  Don't use Idaho or Russet, use a waxy potato, in my case I used yellow butter potatoes.  Steam, boil or roast them until just before fork tender, al dente, I guess.  I steamed for 10 minutes-ish. 

Cheese Mixture
While the potatoes are going, start mixing the cheese egg, flour, salt, pepper and paprika. 
Now, from what I read, Georgian cheese is different from what we are used to, it is tangy, salty, sharp and stringy.  So use what you have, but I like the mixture of shredded cheddar(Sharp), shredded Mozzarella(Stringy) and I reserved slices of Munster(Salty and Tangy) for later.  Refrigerate for a few minutes to let the flavors meld.

Lay out the dough, on the baking pan, and remove the corners.  Place the potatoes and cheese in the center and form into a football shape.

I needed to roll the corners on the long sides over once more so nothing would  stick up.  I found it easiest to turn the "pile" so it was parallel to the edge of the counter and start with the side farthest away from me.  Bring the middle on one side up and one tip.  Start pleating and pinching, use water as glue.  Do the other end and turn the pan and repeat on the other side.  You want to end up with something that looks like a boat or a moccasin.

Before Baking
Dot with butter and place the reserved Munster, if using, on top.  Place in a 350 degree oven and bake for 15 to 20 minutes.
It should be brown and bubbly.
Remove and place on a cooling rack as soon as possible so the bottom doesn't become sweaty.  Let cool a little, serve, eat and listen for the arteries clogging.  I'm not saying it's unhealthy, just you may want to have a salad for the next couple meals.  Try serving to a marathon runner!
