Easy Westernized Khachapuri

Khachapuri
Khachapuri is a staple among the Georgian people (country not the state); it varies across the country but basically it is cheese and bread.  It is great with a bitter green salad and a beer or just use it as an appetizer.

1          Puff Pastry Dough
1   lb    New, Butter or Red Skin Potatoes - diced into 3/4 to 1 inch pieces
2   c     Shredded Cheese, Mozzarella, Cheddar, Munster, Monterey Jack or mix
2          Egg
2   T     Flour
1   t      Salt
1   t      Pepper
2   t      Paprika
1   T     Butter
            Olive Oil

Begin by boiling or steaming the potatoes almost to for tinder, 10 min or so.  Defrost the pastry sheet.
Mix cheese, egg, flour, salt, pepper and paprika in a bowl and refrigerate for a few minutes.
Preheat oven to 375.
Lay out dough on baking pan and cut or yank off the corners.  Place potatoes in middle in a wide line from one corner, however you want to do it is fine.  Place cheese on top.
Lay excess dough over the top of cheese and potatoes, rolling under any excess.  You want to end up with something like a boat.  Or, you can make it more like a pizza.  Dot top with butter and brush exposed dough with Olive Oil.
Bake for 15 to 20 minutes until the cheese is browning.  Remove to cooling rack or cutting board as soon as possible.  Enjoy then make an appointment with your cardiologist.
